Super quick noodle soup

Time: 5- 10 min

Ingredients: 

  • 1 pack of quick noodles
  • 1 carrot - grated
  • 1 stick of celery - chopped
  • 500 ml boiled water

Recipe:

  1.  Boil water
  2. Throw noodles, carrot, celery and flavour (or half a vegetable stock cube) into a saucepan.
  3. Add water and boil 2-3 minutes
  4. You can drain it, or have it soupy. I like soupy with a slice of bread.

You can leave the flavour/stock out alltogher if you like. Just put in some salt and pepper for a more healthy version.

Cheese, ham variation: 

Ingredients: 

  •  noodles
  • Chopped ham
  • Grated cheese
  • Egg
  • Salt, pepper
  • Oil

Recipe:

  1.  Cook noodles and drain
  2. Add back to pan on low heat with a little oil
  3. Crack in an egg and stir
  4. Add chopped ham
  5. Take off heat and add grated cheese
  6. Add salt and pepper.

Yum!

The stuffed spud

Ingredients:

  • 1-2 potatoes
  • 1 chopped tomato
  • grated cheese
  • mince, carrots, mushrooms etc. as extras

Recipe:

  1. Put one potato in a thin plastic bag, poke with a fork and microwave on 400 watt for about 8 mins, or until soft.
  2. Cut a “V” shape out of the top half of the spud. Scoop out some of the insides, mix with tomato, cheese and other extras. Top with a bit of extra cheese.
  3. Pop back in microwave for  2-3  minutes.

Some easy entrees

Melon + ham

 Time: 5 min.   This is as easy as it sounds + makes a great starter/snack. 

  1.  Cut melon longways
  2. Wrap in a slice of ham. Done!

 You could also try adding cubes of melon, ham, tomato and spinach to make a salad. The green melon, or rockmelon is good for this. You can use any melon really, just make sure it is sweet. Sweet!

Avocado halves

Time: 5 min. Another super easy snack/entree with lotsa vitamines.

  1.  Cut avocado in half and remove stone.
  2. Drizzle with either: oil, vinegar or lemon juice. Crack salt & pepper on top.

Poached eggs

  • Time: 10 min

Ingredients:

  • 1-2 eggs
  • Boiling water
  • 1 teaspoon vinegar
  • Salt, pepper

Extras:

  • Toast
  • Grated cheese
  • Ham
  • Tomatoe

Recipe:

  1. Boil water in a pot or frypan, atleast about 10 cm. high.
  2. Add about one tablespoon vinegar.
  3. When water gently simmering crack an egg carefully & gently into the water.(A good tip here is to first crack the egg into a short glass, and then slowly slide it into the water.)
  4. Cook for 4-5 minutes for a runny middle, or about 8 minutes for hard boiled.
  5. Serve on toast with a little grated cheese, salt, pepper & even a slice of ham under the egg if you have some.
