Super quick noodle soup

Time: 5- 10 min

Ingredients: 

  • 1 pack of quick noodles
  • 1 carrot - grated
  • 1 stick of celery - chopped
  • 500 ml boiled water

Recipe:

  1.  Boil water
  2. Throw noodles, carrot, celery and flavour (or half a vegetable stock cube) into a saucepan.
  3. Add water and boil 2-3 minutes
  4. You can drain it, or have it soupy. I like soupy with a slice of bread.

You can leave the flavour/stock out alltogher if you like. Just put in some salt and pepper for a more healthy version.

Cheese, ham variation: 

Ingredients: 

  •  noodles
  • Chopped ham
  • Grated cheese
  • Egg
  • Salt, pepper
  • Oil

Recipe:

  1.  Cook noodles and drain
  2. Add back to pan on low heat with a little oil
  3. Crack in an egg and stir
  4. Add chopped ham
  5. Take off heat and add grated cheese
  6. Add salt and pepper.

Yum!

Veggie soup

Serves: 1-2

Ingredients: 

  •  1 potato, cubed
  • 1/2 sweet potato, cubes
  • 2 celery sticks, chopped
  • vegetable stock and water

Extras:

  • Other veggies like: green squash/zucchini, tomato, spinach, broccoli, seaweed, carrot, beans, pepper
  • A can of tomatoes
  • Some pasta (put in same time as the water)

Spices:

  • Basil - 1 teaspoon
  • Salt, pepper
  • Oregano - 1 teaspoon
  • 2 teaspoons soysauce

Recipe:

  1.  Fry potato in a little oil - 5 mins
  2. Boil approximately 700 ml. of water in kettle
  3. Add sweet  potato and other veggies. Fry 5 more minutes.
  4. Add water and crumble 1 stock cube (vegetable stock) into soup. (Add pasta here if you want - about on e small handful of penne pasta).
  5. Add spices and leave simmering for about 1/2 hour. Stir occasionally.

Sweeeeet potatoes

So these little babies rock my world in Norway. They are super easy to cook, taste great & you can pretty much buy them all year. Just make sure to get the orange-in-the-middle ones, not white. (Just snap a little off the end.)Time: 20-30 min 

In the oven:

  1.  Heat oven to 180 degrees
  2. Peel potato and cut in cubes
  3. Put in an oven tray with oil, and cook for about 20 mins, or until soft.

In the pan:

  1.  Heat pan at 2.5 (on a 1-3 scale) and add oil.
  2. Fry slices or cubes for about 10 mins, or until soft. (Just make sure they don’t burn).

Make a soup: 

 1 sweet potato in cubes, cover with water. Coo 1/2 hour until mushy. Add salt, pepper and a pinch of cumin.

Make a salad: 

Spinach/lettuce, tomato and sweet potato.

Roasts: 

  • Try roasting them with honey and soy sauce. 1 tablespoon soy sauce. 1.5 honey.
  • Roast with other vegies: potatoes, carrots, squash, chicken.
