Fritata with sweet potatoe
- Serves: 1
- Time: 25 min.
Ingredients:
- 2 or more eggs
- 1 tomato, sliced
- 8 slices sweet potato
- salt & pepper
- oregano
- basil
Optional extras:
- Sliced mushrooms
- ham/bacon
- cheese, grated
- olives, sliced
- spinach
- red pepper
- carrot
- green squash
Recipe:
- Heat oil in pan and add sweet potato. Fry for 5-10 mins. until a little soft.
- Crack the eggs into a cup and stir with a fork. Add salt, pepper and a pinch of oregano and basil to the eggs.
- Turn down the heat of the pan to about 1.5, 2 (on a scale from 1-3). Spread the sweet potato evenly across the bottom of the pan. Add in a little bit of the egg mix. Lay on the sliced tomatoes and then pour the rest of the eggs on top.
- Cover with a lid and cook until not runny on top. About 5-10 minutes.
- Check that the bottom’s never burning.
- You can push little holes in the fritata whilst cooking, to let the runny egg bits run to the bottom of the pan.
