Sweeeeet potatoes
So these little babies rock my world in Norway. They are super easy to cook, taste great & you can pretty much buy them all year. Just make sure to get the orange-in-the-middle ones, not white. (Just snap a little off the end.)Time: 20-30 min
In the oven:
- Heat oven to 180 degrees
- Peel potato and cut in cubes
- Put in an oven tray with oil, and cook for about 20 mins, or until soft.
In the pan:
- Heat pan at 2.5 (on a 1-3 scale) and add oil.
- Fry slices or cubes for about 10 mins, or until soft. (Just make sure they don’t burn).
Make a soup:
1 sweet potato in cubes, cover with water. Coo 1/2 hour until mushy. Add salt, pepper and a pinch of cumin.
Make a salad:
Spinach/lettuce, tomato and sweet potato.
Roasts:
- Try roasting them with honey and soy sauce. 1 tablespoon soy sauce. 1.5 honey.
- Roast with other vegies: potatoes, carrots, squash, chicken.
